Lamb Chops with Asparagus

Ingredients:
Olive oil
Salt
Pepper
Rosemary
Parsley



You will more than likely want at least 2 hours to marinate these lamb chops, or even when you first wake up works better. Grab a ziploc plastic bag and put the lamb chops in.
Liberally add olive oil, salt, pepper, rosemary and parsley. It may be easier to cover the lamb chops with the dry ingredients first, that way you don't add too much into the bag.

When you're ready to cook these, heat up a frying pan over medium to medium high heat with olive oil. You wont have to add too much oil to the pan as the lamb chops already have been marinating in it. Once the pan has heated up, you will want to sear each side for 3.5 to 4 minutes. You will also want to put a cover over the pan as it will help from grease flying and will help the meat cook. This should give you a little pink in the middle, as this is what you want from a lamb chop.

Asparagus

Ingredients:
Aluminum foil
olive oil
salt
pepper

You will want these to sit for about 15 minutes before cooking them. Prepare the asparagus. On the aluminum foil place the prepared asparagus and add about 3 tbsp of olive oil, and sprinkle with the salt and pepper. Preheat the oven to 350 degress. After these have set for about 15 minutes, place in the oven and let them cook for about 8-10 minutes.

Hi,

The lamb chops sound great. I assume you could just toss these on the grill, as well. As for the asparagus, do you put them on a foil lined pan or make a packet of the foil? I bet this meal would be great with some rosemary roasted red potatoes.

Great questions. I haven't added any grilling recipes yet, as the weather hasn't been that great around here. I guess thats no excuse, but certainly sometime this week i'll get some bbq recipes, and start getting tips and hints to cooking.
Anyways, to your question, yes you can grill these. I've done this recipe about 3 times so far, but haven't tried grilling them, but as long as your marinate them, they will stay juicy no matter what way. I would say put the burners on medium and let the grill heat up for about 5 minutes before putting these on. Try to turn these just once, and i would say the same way... 3-4 minutes a side. You want a little red/pink in the middle as stated in the recipe.

As for the asparagus, I made a packet out of them. You can also put these on the grill the same way, as long as you do the chops on the grill.

I've never had the rosemary roasted potatoes, but they do sound great. I may have to check these out.
