Roast leg of lamb

A very simple recipe that I used a slow cooker for.  I purchased a 2.5lb leg of lamb roast at the local grocery store, and it was only $4.





Ingredients:
Rosemary
Thyme
Salt
Pepper
Garlic cut into slivers
1.5 cups Orange juice
1/4 cup Olive oil
1/4 cup Lemon juice

Directions:
1) Start by making a couple of slits with a knife into the roast.  Insert the garlic slivers into the roast.  If you don't happen to have fresh garlic, just use garlic powder or garlic salt.  Next, place the roast in the slow cooker and add all the liquid ingredients.
2) Sprinkle the rosemary, thyme, salt, pepper, and if you need to the garlic onto the roast.
3) Cook the roast in the slow cooker on medium heat.  It should take about 2.5 hours.  Try turning the roast about every 30 minutes.  If you have a thermometer, the roast is done at about 160 degrees.  This should give you a medium cooked roast.
4) When the roast is done, simply take it out and let it rest on a plate for 10-15 minutes, and then you can cut into it.

Goes great with mashed potatoes, and asparagus!
