Pumpkin Roll





Ingredients:
3 eggs(beat well)
1 c sugar
2/3 c pumpkin
1 tsp lemon juice
3/4c flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt

Filling:
1 c conf. sugar
6 oz cream cheese
4 tbsp butter
1/2 tsp vanilla

Directions:
Beat 3 eggs well, add sugar, pumpkin and lemon juice and mix.  Add the remaining ingredients and mix. Spread mixture on a 15x6 greased and floured cookie sheet.  Spread filling onto the dough and roll up.  Bake at 375 for 15 minutes.  After baking, roll in a towel sprinkled with confectionery sugar and let cool.
